It is that sleeping there changes the geography of the next day: wineries, viewpoints, monasteries and southbound roads are no longer a long return trip from Mostar. If none of those southern plans matter and you are returning north immediately, stay in Mostar. A second base should solve a route problem or create an experience you could not get as easily from the first.
